Quick and Easy Paneer Biryani

This is a birthday gift for my cousin, Rama, who seems to love biryanis and pulavs. 🙂

What I loved about this quick and easy Paneer Biryani was just that; it was quick and easy to make, but oh-so-full of subtle flavours. You could have this biryani by itself, or then as a vehicle for dishes such as Mirchi ka Salan.

Serves: 4

Time: 45 Minutes


  1. Basmati Rice – 1.25 Cups
  2. Paneer or Cottage Cheese – 150 gms
  3. Peas – 1/4 Cups
  4. Carrot – 1 Small
  5. French Beans – 6
  6. Cauliflower Florets – 1/4 Cup
  7. Onion – 1 Small
  8. Cloves – 3
  9. Cinnamon – 2″ Piece
  10. Cumin – 1 tsp
  11. Bay Leaf – 1
  12. Turmeric – 1/4 tsp
  13. Garam Masala, Kitchen King Masala – 1 tsp
  14. Ghee or Oil – 1 tsp
  15. Salt to Taste


  1. Wash the basmati rice and soak in 2 cups water for 10 minutes.
  2. Add 1/2 tsp salt and pressure cook for two releases of pressure (2 whistles).
  3. When the pressure cooker cools, spread the rice on a plate to cool and dry a bit.
  4. Peel and chop the carrot into 1/2″ pieces.
  5. Peel and chop the onion into 1/2″ pieces.
  6. Chop the French Beans into 1/4″ pieces.
  7. Cut the paneer into 1/2″ cubes.
  8. In a heavy bottomed vessel, heat the oil or ghee.
  9. Add cumin, cloves, cinnamon, and bay leaf.
  10. Saute for 2-3 minutes.
  11. Add onion and saute till the onion is transparent.
  12. Add french beans and carrot pieces.
  13. Saute for 5-7 minutes.
  14. Add cauliflower florets.
  15. Stir-fry till all vegetables are cooked.
  16. Add turmeric and garam masala/kitchen king masala.
  17. Saute for 2-3 minutes.
  18. Add paneer pieces.
  19. Saute for 2-3 minutes.
  20. Add the cooked rice and salt.
  21. Mix with a gentle hand.
  22. Serve hot with raita, papad, or salan.
