Moong Sprouts Dosa | Low Potassium Pesarattu for Renal Diet

Moong Sprouts Dosa is a low-potassium, low-protein version of the famous Andhra Pesarattu that is suitable for a renal diet or a kidney diet. The most important part to reducing potassium in this Dosa is to sprout the whole moong really well. I have also used Amchur to replace salt AND to cut the sweetish taste of the sprouts.Serve it with Rava Upma (another low potassium, low protein dish) on the side to make for a filling meal that we call MLA Pesarattu.
Grind 2 cups of moong sprouts, 1 green chilli, 1 tsp grated ginger, 1 tsp Amchur Powder, 2 tbsp rice flour and 3/4 water to a coarse batter.
Add 1/4 tsp turmeric and mix well.
Transfer to a bowl.
Making the Low Potassium Moong Sprouts Dosa
Grease a 10" non-stick tava with a few drops of oil.
Over medium flame, heat the pan. Ensure that the pan is evenly heated.
Pour 1/3 cup batter into the centre to the tava.
Using a heavy ladle, quickly spread the batter to form a 8"thick dosa.
Let the dosa cook till the edges start to brown.
Using a turning spatula, loosen the moong sprouts dosa from the tava. Loosen the edges first and slowly move to the centre.
Flip the dosa over and let it cook for a few minutes.
Serving Suggestions
Serve immediately with Cranberry Chutney or Tamarind Chutney.
Serve with Onion Upma to make for a filling low potassium meal.
Notes
The Moong must be really well-sprouted to reduce the potassium content. Sprout the moong for at least 18 hours to get sprouts that are 1.5" to 2" long.
