Instructions
Cooking the Kala Chana
Soak the kala chana in 1-2 cups of water for at least 6 hours.
Drain all the water and add 1 cup water.
Pressure cook till the chana is just soft.
This takes 1 whistle and cooking on medium flame for 15 minutes. You can also pressure cook for 4 whistles.
Drain and save the water in which the chana was cooked.
Getting the Dahi Ready
Beat the dahi well to get a smooth consistency.
Add cumin powder, coriander powder, besan, garam masala, and salt.
Mix well.
Add 1/2 cup of the water in which chana was cooked and mix well. Set aside.
Cooking the Jaisalmeri Kala Chana Kadhi
In a pan, heat the ghee.
Add the cumin seeds and wait till they change colour.
Add asafoetida, red chilli powder, turmeric and green chilli.
Stir-fry for a few seconds.
Add the cooked chana and mix well.
Add the dahi and some more water, if the gravy is too thick.
Simmer for 5 minutes.
Serve hot with rice or roti.
