Rice Roti Upma or Poha (Kottu Pathiri) is a simple snack or breakfast that uses up leftover rice rotis. This gluten-free dish is also low potassium making it a viable Renal Diet option for people with Hyperkalemia or Chronic Kidney Disease.
Cut 4 x 7" rice rotis into 1/2" pieces. You can also grind it to a coarse powder, but I like having larger pieces that can be chewed. If you are going to make a coarse powder, then use 6 rotis.
In a kadhai, heat 1/2 tsp oil.
Add 1/2 tsp mustard seeds and wait till they splutter.
Add 1/2 tsp cumin seeds and 1/4 tsp finely chopped green chillies. Stir-fry for a few seconds.
Add 4 to 6 curry leaves and stir-fry for a few seconds.
Add 1/4 cup finely chopped onions, and stir-fry till the onions are transparent.
Now add some salt and 1/8 tsp of turmeric, and mix well.
Add the rice roti pieces and mix well.
Turn off the heat.
Sprinkle 1 or 2 tsp water and mix well.
Keep covered for 5 mins.
Serve the Rice Roti Upma with Dahi on the side.
