Badam Halwa | Almond Halwa
Aruna
Badam Halwa is a rich dessert made with ground almonds, sugar, and ghee. Easy to make, this Almond Halwa is one of my favourites during Diwali.
Note
: Badam Halwa is very rich and high in calories, so typically each serving is a few tablespoons.

Instructions
Soak and Peel the Almonds
Soak 1 cup almonds in warm water for 3 hours.
Drain all the water and then peel the almonds.
Soak the Saffron
Soak 20 strands of saffron in 2 tbsp warm milk for 15 minutes.
Making the Badam Halwa
Grind 1 cup sugar and 1/2 tsp Cardamom powder together to fine powder.
Add the soaked and peeled Almonds as well as 3/4 cup milk, and grind to a smooth paste.
In a heavy-bottomed kadhai, over medium flame, heat 3 tbsp ghee.
Add the ground badam paste and mix well
Stir constantly and cook till the paste thickens a bit.
Now add 1 tbsp ghee and mix well.
Cook while stirring constantly till the Badam Halwa becomes translucent.
Turn off the heat.
Add 1 tbsp ghee and mix well.
Finally add the milk in which the saffron strands are soaked, and mix well.
Serve the Badam Halwa warm.
Notes
If you want a softer consistency, add a little warm water or milk and mix well.
You could increase ghee by 1 tbsp.
Badam Halwa tends to harden as it cools because of the ghee in it. So warm it before serving it.
Refrigerate the leftover Badam Halwa.
