For the Glaze

Instructions
The Preparations
Butter and line an 8" pan with parchment paper.
Preheat an oven to 160C.
Making the Cake Batter
Sieve the flour, baking powder, and salt together. Set aside.
To a heavy bottomed vessel, add the honey, butter, and sugar.
Over low flame, heat the mix till the butter and sugar melt.
Take off the heat and let it cool.
This is to ensure that the eggs do not cook in the hot mix.
In the meantime, beat 3 eggs.
When the honey-sugar-butter mix cools, add the beatens eggs and mix well.
Add the flour and mix well to ensure there are no clumps.
Baking the Cake
Transfer the batter to the lined cake pan.
Bake for 60 minutes at 160 C or till the skewer comes out clean.
Remove from the oven.
Applying the Glaze
Warm 2 tbsp honey.
Use a brush to quickly apply the glaze to the still-warm cake.
Store the
Devonshire Honey Cake
in an airtight tin.
