Vagharelo Rotlo | Bajra Roti in Buttermilk

Instructions
The Prep
Crush 2 x 8" Bajra rotis into small pieces.
You could also crush them till they are a coarse powder consistency.
Beat 2/3 cup dahi till smooth, then add 2/3 cup water and mix well.
Grind 1" piece of ginger, 2 or 3 green chillies, and 1 or 2 cloves of garlic into a coarse paste.
Making the Vagharelo Rotlo
In a heavy bottomed vessel, over medium flame, heat 1 tsp oil.
Add 1/2 tsp mustard seeds and wait till they crackle.
Now add 1/2 tsp cumin seeds and stir-fry till the cumin starts to change colour.
Next, add 1/2 cup chopped onions, the ground ginger-garlic-green chilli paste, and a few curry leaves.
Stir-fry the mix till the onions are translucent.
Turn the heat down to low.
Add 1/2 tsp of turmeric and some salt, and mix well.
Now, add the crushed bajra roti pieces and mix well.
Add the buttermilk and mix well.
Cook the mix for 2 or 3 minutes while stirring constantly.
Turn off the heat.
Serve the Vagharelo Rotlo while it is still warm.
