I love Sweet Potato in Jaggery Syrup. Called Gudwali Shakarkandi in Hindi, this is a simple and wholesome dessert that makes great use of the sweet potato. In parts of Maharashtra and Gujarat, this dish is classified as Vrat ka Khana or a dish suitable for fasting days.
Winter means plentiful supply of Sweet Potatoes, and that means these delicious Glazed Sweet Potato slices are made often in my home as a dessert. This Sweet Potato in Jaggery Syrup is an easy to make, vegan dessert that also qualifies as Vrat ka Khana or Upvas ka Khana in parts of Maharashtra and Gujarat.
Sweet potato (called Shakarkand in Hindi and Ratalu in Marathi) is a vastly underrated vegetable. It is a great source of fibre, vitamin A, Vitamin B3 or Niacin, Vitamin B6, Vitamin C, iron, copper, and manganese. It is also a great carbohydrate to include in your diet in moderate amounts, if you are fasting and even dieting.

Some Tips for Making Gudwali Shakarkandi | Farali Ratalyache God Kaap | Glazed Sweet Potato Slices
- You can the peel the sweet potato or keep the peel on; the choice is yours. However, if you keep the peel on, be sure to scrub the spud well to wash off the dirt.
- While we traditionally we use Jaggery in India, you can replace it with sugar. If you are using sugar, use a tad bit less water as sugar has far higher water content than jaggery.
- Keep the slices a bit thick (about 1/4″ thick), else the sweet potato will disintegrate as you cook it.
- Be sure to boil the sweet potato slices before adding sugar or jaggery as after you add the sweetening agent, the sweet potato does not cook as quickly.
How to Make Sweet Potato in Jaggery Syrup
- Boil 1.25 cups of water.
- Scrub and clean 1 large sweet potato (~200 gms) thoroughly.
- {Optional} Peel the sweet potato. I did not peel the sweet potato.
- Cut into 1/4″ thick discs.
- Add the sweet potato discs to the boiling water.
- Cook covered till the sweet boiled softens a bit.
- Add 1/2 cup jaggery and 1/2 tsp cardamom powder.
- Cook over low heat till:
- the sweet potato is cooked and just starts to turn transparent.
- the syrup thickens
- Serve warm Sweet Potato in Jaggery Syrup immediately.

Equipment
- 1 Heavy Bottomed Vessel
- 1 Knife
- 1 Spatula
Ingredients
- 1 Sweet Potato Large (~200 gms)
- 1/2 Cup Grated Jaggery (75 gms)
- 1/2 tsp Cardamom Powder
- 1.25 Cup Water
Instructions
- In a heavy bottomed vessel, boil 1.25 cups of water.
- Scrub and clean 1 large sweet potato (~200 gms) thoroughly.
- {Optional} Peel the sweet potato. Note: I do not peel the sweet potato.
- Cut into 1/4" thick discs.
- Add the sweet potato discs to the boiling water.
- Cook covered till the sweet boiled softens a bit.
- Add 1/2 cup jaggery and 1/2 tsp cardamom powder.
- Cook over low heat till the sweet potato is cooked and just starts to turn transparent.
- Serve warm Sweet Potato in Jaggery Syrup immediately.
Notes
Though you can make this dish with sugar, it tastes best with jaggery syrup.
