This crisp Upvas ka Dosa or Farali Dhirde makes for a filling meal of days of fasting. Made with amaranth and little millet flours, this Rajgira Sama Dosa (or Rajgira Bhagar Dhirde) is very nutritious, low-calorie breakfast as well. During the 9 days of Navratri, many people give up grains and replace them with millets or Sago (Sabudana). Two of the ingredients that are widely used in this time are Rajgira (Amaranth) and Sama (Little Millet). This recipe for Upvas Ka Dosa makes use of both these flours to make an instant, no-fuss dosa.
Also called Farali Dhirde or Rajgira Bhagar Dhirde in Maharashtra, this gluten-free dosa is rich in calcium, protein, magnesium, zinc, and may ore micronutrients. As a result, this dosa is a great addition to any diet plan and I often have it for breakfast.
Tips to Make the Perfect Rajgira Sama Dosa
- If you cannot find Bhagar or Sama Flour (Little Millet flour), soak little millet in water for 1 hour, drain all the water and then grind to a smooth paste with a little water.
- I made this dosa with ghee this dosa is gluten-free and can be made vegan by replacing ghee with oil, and yogurt/dahi with water.
- To get a crisp dosa, ensure that the tava/griddle is well-greased and hot before you pour the batter onto it.
- If you use sour yogurt, the dosa will also have a nice tangy taste.

How to Make Upvas ka Dosa | Rajagira Sama Dosa
- The Prep
- Pound 1/2 tsp of cumin and 1-2 spicy green chillies to a coarse paste.

- Making the Rajgira Sama Dosa Batter
- To a bowl, add 1/4 cup Rajgira atta (Amaranth flour), 1/4 cup Sama/Bhagar Flour (Little Millet flour), the green chilli-cumin paste, and Sendha Namak (or just plain salt).
- Mix well.
- Add 1/4 cup yogurt and mix well into a smooth paste.
- Add 1/4 cup water and mix well till all lumps are dissolved. Then, add another 1/4 cup water and mix well.
- {Optional} Set the batter aside for 10 minutes.
- Making the Upvas ka Dosa
- Heat a large dosa tava and use 1/4 tsp ghee or oil to grease the surface well.
- Mix the dosa batter well and pour 1/2 cup of dosa batter onto the tava to form a dosa.
- Let the dosa cook over medium flame for about 5 minutes or till the edges start to brown.
- Using a flat turning spatula, lift the edges of the dosa and then work your way to the centre of the dosa.
- Flip and cook for 2 or 3 minutes.
- Serve the hot Upvas ka Dosa with Dahi or Upvas ki Chutney.

Ingredients
- 1/4 Cup Sama Flour, Bhagar Flour, Little Millet Flour 40 gms
- 1/4 Cup Rajgira Flour, Amaranth Flour 30 gms
- 1/4 Cup Dahi, Yogurt (Replace with water)
- 1/2 Cup Water (Reduce to 2/3 Cup, if using water instead of dahi)
- 1-2 Green Chillies
- 1/2 tsp Jeera
- Sendha Namak to Taste (Replace with regular salt)
- Ghee or Oil, as needed

Notes
- Replace the 1/4 cup yogurt and 1/2 cup water I have used with 2/3 cup water.
- Use oil instead of ghee to make the dosa.
