I have been a fan of Zucchini Noodles or Zoodles for a while now. Low in calorie, delicious and easy to make, these versatile vegetable noodles can be used any pasta based recipe; be it Italian, Asian, or even better fusion cuisine. This time around I made Zoodles with Soya Sauce and Garlic to savour Indo-Chinese flavours.
I absolutely love noodles of all kinds but in recent times have found the traditional flour-based noodles to be a bit heavy of the stomach. In addition, I have been trying to moderate my diet and so salads are a big part of any meal. So Zucchini Noodles are the perfect dish for me; with these vegetable-based, I get to enjoy a noodle-based dish packed with flavour but light on the stomach. And I do not need to have a separate salad. 🙂
All you need to make Zoodles is Zucchini and a Julienne peeler. Of course, having a spiralizer would be great and give you longer noodles, but believe you me a Julienne peeler works just as well.
Cooking Zoodles
These noodles can be eaten raw or then can be stir-fried for a minute or two. The way I cook Zucchini Noodles is to just stir-fry them in a bit of olive oil or sesame oil (just about 1/2 tsp oil for 2 cup noodles) till they are translucent.
So far I have used Zoodles only in stir-fried dishes. I have not yet used Zucchini Noodles with sauces, and will update this post about using them with sauces soon.

How To Make Zucchini Noodles Flavoured with Soya Sauce and Garlic
- The Preparations
- Mix together 1.5 tsp Soy Sauce, 1/2 tsp Vinegar, 1 tsp brown sugar, and 1/2 tsp chilli powder. Set aside.
- Over medium heat, dry roast 1 tsp sesame seeds till they start to pop and change colour. Set aside.
- Chop 4 to 5 cloves of garlic. You will need about 1.5 tsp finely chopped garlic.
- Mix together 1.5 tsp Soy Sauce, 1/2 tsp Vinegar, 1 tsp brown sugar, and 1/2 tsp chilli powder. Set aside.
- Making Zucchini Noodles
- Chop the ends off 2 large Zucchini (~400 gms).
- Using a Julienne peeler, cut the 2 large Zucchini (about 400 gms) into thin strips. If you have a sharp knife, and the skills to match, you can even chop the Zucchini into thin noodles.
- In a large pan, over medium flame, heat 1 tsp sesame oil (or olive oil).
- Add 1.5 tsp finely chopped garlic and stir-fry till they are light golden brown.
- Now add the Zucchini Noodles and stir-fry with a gentle hand till they become translucent.
- Turn off the heat, and immediately add the sauce and some salt, if need; and mix well.
- Sprinkle the toasted sesame seeds and chilli flakes.
- Chop the ends off 2 large Zucchini (~400 gms).
- Serve the warm Garlicky Zoodles immediately.

- 2 Zucchini Large (~400 gms)
- 1 tsp Sesame Seeds
- 1/2 tsp Chilli Flakes
- 1.5 tsp Garlic
- 1 tsp Sesame Oil
- Salt as Needed
- 1.25 tsp Soya Sauce
- 1/4 tsp Vinegar
- 1 tsp Brown Sugar
- 1/2 tsp Red Chilli Powder
Instructions
- Mix together 1.25 tsp Soy Sauce, 1/2 tsp Vinegar, 1 tsp brown sugar, and 1/2 tsp chilli powder. Set aside.
