Nuvvula Pachadi | Andhra Sesame Chutney | Til ka Chutney

Nuvvulu or Sesame Seed is one of my favourite flavours, and I use the seeds or the roasted, spiced sesame powder (Nuvvula Podi) liberally in my cooking. I also mix Nuvvula Podi with rice topped with sesame oil or then make this spicy Andhra Sesame Seeds Chutney that we call Nuvvula Pachadi.

In South India; especially in Andhra Pradesh and Tamil Nadu; cold-pressed, unprocessed sesame oil and unpolished sesame seeds play a big part in cooking. This is one of the ways we get our micro-nutrients like iron, Vitamin B, magnesium, phosphorus, calcium and zinc.

Making this Nuvvula Pachadi hardly takes any time and so can be made on days when you are feeling lazy too. 🙂

You can have this pachadi as an accompaniment to idli and dosa, or then like we Andhras savour it; with rice and sesame oil.

This is the recipe for Nuvvula Pachadi, a nutritious and delicious sesame seeds chutney from Andhra Pradesh. Just mix it in rice topped with sesame oil to get a good dose of nutrients like iron, Vit B, magnesium, phosphorus, and zinc.

Ingredients
  • 1/2 Cup Unpolished Sesame Seeds, Nuvvulu, Til
  • 3-4 Spicy Red Chillies
  • 1/2″ Ball Tamarind
  • 1/4 tsp Turmeric
  • 1 tsp Oil (Sesame Oil Preferred)
  • Salt to Taste
For Tempering
  • 1 tsp Oil (Sesame Oil Preferred)
  • 1 tsp Mustard Seeds
  • 1/2 tsp Cumin Seeds
  • 1 Split Red Chilly
  • 4-5 Curry Leaves
Instructions
Making the Andhra Nuvvula Pachadi
  1. In a kadhai, over low flame, heat the sesame oil.

  2. Add sesame seeds and chillies.

  3. Stir-fry till the seeds puff up a bit, become aromatic and change colour.

  4. Turn off the heat, and add tamarind and turmeric.

  5. Grind with a some water and salt till it is a thick paste.

The Tempering
  1. In a ladle, heat the oil.

  2. Add mustard seeds and wait till they crackle.

  3. Add cumin seeds and split red chillies, and stir-fry for a few seconds till they start to change colour.

  4. Turn off the heat and add torn curry leaves to the tempering.

  5. Mix well and add to the Nuvvula Pachadi

Savouring the Andhra Nuvvula Pachadi | Ellu Pachadi
  1. Add a dollop of the pachadi and 1 tsp sesame oil to warm rice, mix well, and eat at the start of the meal. We call this Modati Mudda in Andhra Pradesh.
