Cold days call for hot, heartwarming breakfasts or snacks and this Jowar Khichu ticks all the boxes. It needs literally 10 minutes to make and is served hot off the stive with some chilli oil on top. Salt, spicy and piping hot, this dish that is also called Jowar no Khato Lot is comfort food at its best!
I already have the recipe for Rice Flour Khichu on the blog and today I am back with the Jowar Flour Khichu. Khichu is simply rice or millet flour boiled in water spiced with cumin, green chilli and salt, and then served piping hot with some pickle masala or chilli oil on top. Believe you me, nothing is simpler to make and satisfying to eat that this traditional Gujarati dish. You can also make this with Bajra and that would be even more warming!

A Diabetic Friendly and Kidney Friendly Recipe
- This is a low potassium recipe that can be very easily adapted for a Renal Diet or Kidney Diet followed by people with Chronic Kidney Disease (CKD).
- This is a diabetic-friendly recipe because Sorghum or Jowar is a low glycemic index ingredient.
Some Tips to Make the Perfect Jowar Flour Khichu
- Traditionally, in Gujarat, they add something called Papad Khar (Alkaline Salt) to the water. In the absence of Papad Khar, many people add a pinch of cooking soda. I did not find it necessary to add either.
- When the water is boiling, turn the heat to low or turn it off completely before adding the Jowar flour and then stir constantly to ensure there are no lumps.
- A simpler method is to make a thick but flowy paste of 1/2 cup jowar flour and 3/4 cup water. Boil 3/4 cup water with cumin, green chilli, and salt. Then add the jowar flour paste to the boiling water and mix quickly. This is the surefire way to avoid lumps.
- Jowar Khichu is always served immediately and piping hot.
Making a Jowar Khichu Suitable for Renal Diet (Kidney Diet)
- Jowar Khichu is already a low potassium recipe. All you need to do is now make it low sodium and that is very easy. Just omit or reduce the salt and replace it with amchur. Or then squeeze some lemon juice just before serving.
- It is also advisable to omit or minimize the chilli oil when serving.

How to Make Jowar Khichu or Jowar No Khato Lot
- In a medium-sized, heavy-bottomed vessel, add 1.5 cups water, 1 tsp oil, 1 tsp cumin, 1 or 2 tsp finely chopped green chilli, and some salt.
- Over medium flame, bring the water to a boil.
- Turn down the heat to low.
- Add 1/2 cup jowar atta (sorghum flour) and mix well till there are no lumps.
- Turn the heat up to medium and cook till the mix becomes glossy and thick.
- Making the Chilli Oil
- In a heavy ladle, heat 1 tbsp peanut oil.
- Take off the heat.
- Immediately add 1/2 tsp spicy red chilli powder and mix well.
- Serving the Jowar Khichu
- Divide the hot Jowar Khichu into two portions.
- Drizzle with the chilli oil.
- Garnish with a little chopped fresh coriander.
- Serve immediately.

Jowar Khichu | Jowar No Khato Lot
Equipment
- Medium-sized, heavy-bottomed vessel (1/2 litre capacity)
- 1 Ladle

- 1/2 Cup Jowar Atta, Sorghum Flour
- 1-2 Green Chilli (Finely Chopped)
- 1 tsp Cumin Seeds
- 1.5 Cups Water
- 1 tsp Oil (Peanut Oil preferred)
- Salt to Taste
- 1 tbsp Oil (Peanut Oil preferred)
- 1/2 tsp Chilli Powder
Instructions
