Taushe Bhakri | Cucumber Bhakri | Cucumber Rotti

This month, for the A to Z Recipe Challenge, I have to cook with an ingredient whose English name begins with the letter C and I chose Cucumber. The dish I made is a Konkani classic called Taushe Bhakri or Cucumber Rotti

Ever since I have joined a few cooking challenges, I have been enjoying myself because I have to explore various cuisine to cook for the chosen theme. Over the past few years, I have explored a lot of Konkani Cuisine, thanks in no small measure to some FB groups that I am a part of, and because of constant inputs from my school friend Anupama.

I am quite in love with the flavours of Konkani cuisine and am glad I can try yet another traditional recipe from this cuisine in the form of Taushe Bhakri

Taushe Bhakri is a traditional Konkani breakfast or snack. Made with rava and grated cucumber, it is light and easy-to-make.

Ingredients
  • 1 Cup Grated Cucumber (3 Large Cucumbers, ~ 250 gms)
  • 1/2 Cup Rava, Semolina (~120 gms, See Notes)
  • 1/2 Cup Grated Coconut
  • 2 tsp Finely Chopped Green Chillies
  • 1 tsp Sugar
  • Salt to Taste
  • Ghee or Oil for pan frying the bhakri
Instructions
Making the Batter
  1. In a bowl, mix all ingredients together to make a thick batter of dropping consistency. 

  2. Cover and set aside for 15 minutes so that the semolina soaks up the juices of the cucumber.

  1. On low flame, warm a tava. Do not make it hot just a bit warm.

  2. Smear a few drops of ghee or oil on the surface.

  3. Place about 1/4 cup of batter in the middle of the pan.

  4. Use your fingers to quickly pat it into a 6″ circle.

  5. Increase the flame to medium.

  6. Cover and cook the bhakri for about 5 minutes.

  7. Using a spatula, gently loosen the bhakri from the pan. Lift the edges to check that the side touching the pan cooked and golden brown in colour.

  8. Flip the Taushe Bhakri and let it flip side cook for 2-3 minutes.

  9. Serve Taushe Bhakri hot with Molaga Podi.

How to Make Taushe Bhakri | Cucumber Rotti | Cucumber Bhakri

  1. Making the Taushe Bhakri Batter
    1. Add all ingredients into a large bowl.
    2. Mix them together to make a thick batter of dropping consistency. Add a bit more semolina, if needed.
    3. Set the batter aside for 15 minutes so that the rava soaks up the juices of the cucumber.
  2. Cooking the Taushe Bhakri | Cucumber Rotti
    1. The first step is to just warm the tava a little, so, on low heat just warm the tava. Do not make it hot because then you won’t be able to spread the batter.
    2. Grease the surface of the pan using a little ghee or oil. Use ghee if possible as it adds an extra element of flavout to the Cucumber Rotti.
    3. Put about 1/4 cup of batter in the middle of the pan.
    4. Quickly, spread the batter into a 6″ circle using your fingers.
    5. Increase the heat to medium, and cook and cover the Cucumber Rotti for about 5 minutes or till the side touching the pan turns golden brown. To check whether the bhakri is ready to be flipped, using a spatula, gently loosen the bhakri from the pan. Lift the edges to check that the side touching the pan cooked and golden brown in colour. Be gentle when loosening the dosa with a spatula because it tends to break easily when uncooked. 

    6. Flip the Cucumber Rotti and let it cook further for 2-3 minutes.
    7. Serve the Taushe Bhakri | Cucumber Rotti hot with Molaga Podi.

  3. Taushe Bhakri definitely looks so tempting. Wish you had made it earlier, then I would have included it in my flatbread series. Well still will book mark this recipe to try out later. Would have never thought of making flatbread using cucumber.

  4. Simple ingredients yet regional cooking / recipes, yet again, shines here! It is tricky to make a perfect rotti but with the step by step images, they would be easier to handle. A huge plus about challenges is our ability to scout for recipes and come up with such delicious ones. Loved it.
