Have leftover Bajra rotis? Then this recipe for Vagharelo Rotlo is just what you need; it will help you transform the leftovers into a delicious millet-based dish that can be eaten as breakfast, snack or even a light dinner.
I was introduced to this dish by Lata Aunty a couple of years ago. One of our dearest neighbours in the apartment complex, Lata Aunty mothers me (rather unobtrusively, I must say) and one of the ways is by feeding me. When I had Vagharelo Rotlo in her home, I loved it and have wanted to make it ever since; and finally, I did this week.
Bajra rotis or Bajrichi Bhakri is widely eaten in winter because of Bajra’s warming properties. However, these rotis tend to become a bit hard when not eaten immediately. As a result, this recipe, in which the rotis soak in buttermilk is just perfect for using up the leftover Bajra Rotis.
This is NOT the Kathiyawadi Vagharelo Rotlo which is far more spicy and uses Garlic Chutney as a flavouring agent. This is a much milder version that can be enjoyed by a wider set of apalates including those who do not like spicy food.

How to Make Vagharelo Rotlo
- The Prep
- Crush 2 x 8″ Bajra rotis into small pieces. You could also crush them till they are a coarse powder consistency.
- Beat 2/3 cup Dahi till smooth, then add 2/3 cup water and mix well.
- Grind 1″ piece of ginger, 2 or 3 green chillies, and 1 or 2 cloves of garlic into a coarse paste.
- Crush 2 x 8″ Bajra rotis into small pieces. You could also crush them till they are a coarse powder consistency.
- Making the Vagharelo Rotlo
- In a heavy bottomed vessel, over medium flame, heat 1 tsp oil.
- Add 1/2 tsp mustard seeds and wait till they crackle.
- Now add 1/2 tsp cumin seeds and stir-fry till the cumin starts to change colour.
- Next, add 1/2 cup chopped onions, the ground ginger-garlic-green chilli paste, and a few curry leaves.
- Stir-fry the mix till the onions are translucent.
- Turn the heat down to low.
- Add 1/2 tsp of turmeric and some salt, and mix well.
- Now, add the crushed bajra roti pieces and mix well.
- Add the buttermilk and mix well.
- Cook the mix for 2 or 3 minutes while stirring constantly. The consistency of the Vagharelo Rotlo should be a bit liquidy at this point because the roti pieces will absorb the liquid as time goes by.
- Turn off the heat.
- Serve the Vagharelo Rotlo while it is still warm.

Vagharelo Rotlo | Bajra Roti in Buttermilk
Equipment
- Heavy-bottomed Vessel (1 litre capacity)
- Bowl – 1/2 Litre Capacity
- Ladle
- Plate
- Chopping Board and Knife
- Grinder or Mortar & Pestle
Ingredients
- 2 Bajra Rotis/Bajra Bhakri (8" size)
- 1/2 Cup Onion (Finely Chopped)
- 2/3 Cup Yogurt
- 2/3 Cup Water
- 1" Ginger
- 2-3 Green Chillies
- 1-2 Garlic Cloves
- 1 tsp Oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- A Few Curry Leaves
- 1/2 tsp Turmeric
- Salt to Taste
