This Devonshire Honey Cake is so delicious with the flavour of honey coming through on every bite that you enjoy your tea time even more. The bonus is that it is so easy to make that even novice bakers can get an excellent result with this recipe.
This month I had to cook with a star ingredient whose English name began with H for the A to Z Challenge. Since honey is among my favourite ingredients, I was pretty certain I would make a dish that featured it prominently. One the dishes that caught my eye during my research was this Devonshire Honey Cake that was featured in the BBC Good Food website.
I was intrigued by this recipe because it seemed very easy to make and needed very few ingredients. Also, it did not involve any complex techniques and so it seemed to be just the recipe to try given how pressed for time I am.
The cake turned out very well and this is a keeper of a recipe.

Recipe for Devonshire Honey Cake

Baking Time: 60 Minutes
Makes: 1 x 8″ cake (8 to 10 slices)
Ingredients
- For the Cake
- Maida, Plain Flour – 300 gms
- Baking Powder – 15 gms (2.5 tsp)
- Salt – 1/2 tsp(Omit if you are using salted butter)
- Honey – 250 gms
- Demerara Sugar – 100 gms
- Unsalted Butter – 225 gms
- Eggs – 3
- For the Honey Glaze
- 2 tbsp Honey
Method to Make Devonshire Honey Cake
- The Preparations
- Prepare an 8″ round cake pan by buttering it lightly and then lining it with parchment paper.
- Preheat an oven to 160 C.

- Making the Cake Batter
- Sieve the flour, baking powder, and salt together. Set aside. Remember to omit the salt if you are using salted butter.
- To a heavy bottomed vessel, add the honey, butter, and sugar.
- Over low flame, heat the mix till the butter and sugar melt. Stir constantly.
- When the sugar and butter have melted, take the mix off the heat and let it cool.
- Beat 3 eggs. Set aside.
- When the honey-sugar-butter mix cools, add the beatens eggs and immediately mix well. The honey-sugar-butter mix must be cool or the eggs will cook in the mix.
- Add the sifted flour and mix well to form a smooth batter.
- Baking the Cake
- Pour the batter into the lined cake pan.
- Bake for 60 minutes at 160 C or till the skewer comes out clean.
- Remove from the oven.
- Pour the batter into the lined cake pan.
- Applying the Glaze (While the Cake is Still Warm)
- Warm 2 tbsp honey. I found that I could apply honey directly to the cake while it was still warm.
- Use a brush to quickly apply the glaze to the still-warm cake.
- Serve the cake with some hot tea.
- Store the Devonshire Honey Cake in an airtight tin.

- Transfer the batter to the lined cake pan.
- Bake for 60 minutes at 160 C or till the skewer comes out clean.
- Remove from the oven.
- Warm 2 tbsp honey.
- Use a brush to quickly apply the glaze to the still-warm cake.
- Store the Devonshire Honey Cake in an airtight tin.

Aruna, your cake has brought back such fond memories. My chachi and I would always try out a new recipe every Saturday. I remember once she brought a Hamlyn Cookery Book from our shop, copied the recipe for Devonshire Honey cake and we baked it. Returned the book to the shop, cake devoured by our big family. Will have to bake it again one day. Will not need to search for a recipe as I’ve got yours to refer to. The cake looks so moist and perfectly baked.
