This spicy, versatile Andhra Peanut Powder called Palli Karam Podi in Telugu and Verkadalai Podi can be eaten with rice or then used to flavour vegetable stir-fries.
If you want a super easy spice powder to flavour your vegetable stir-fries, then you must try this spicy, peanut powder from Andhra. You just need 4 ingredients to make it:
- peanuts
- spicy dried red chillies
- garlic (optional)
- salt
I have used this podi to flavour this string beans stir-fry we call Goru Chikkudu Vellulli Palli Podi Kura.
Some Points to Note
- The garlic in this powder is entire optional but I find that it makes it all the more delicious.
- In Andhra, the use of the very word Karam denotes that the dish is spicy. 🙂 You can reduce the number of chillies, if so required. I would say keep the number of chillies as the level of spiciness reduces when eaten with rice and/or vegetables.
- Always store this peanut powder in an air-tight container.

How to Make Palli Karam Podi or Verkadalai Podi
- Over medium heat, dry roast 1/4 cup peanuts till they change colour and start to pop.
- Transfer the peanuts to a plate to cool.
- Add 1 or 2 drops of oil to the pan, and add about 10 spicy, dried red chillies.
- Stir-fry till the chillies changes colour and swell.
- Transfer the red chillies to the plate to cool.
- To a grinder, add the roasted red chillies, 1/2 tsp salt, and 8 to 10 cloves of garlic.
- Pulse the mix to a coarse powder.
- Now add the roasted peanuts and pulse to get a coarse powder.
- Store the Palli Karam Podi or Verkadalai Podi in an air-tight bottle.
- Serving Suggestions
- Mix some of the peanut powder in hot, steamed rice topped with sesame oil, and enjoy.
- Serve as a side to Idli or Dosa.
- Use it to spice vegetable stir-fries like bhindi or string beans stir-fry.

Ingredients
- 1/4 Cup Peanuts
- 8 to 10 Dried Red Chillies (Spicy)
- 6 to 8 Garlic Cloves (Optional)
- 1/2 tsp Salt
- 1-2 Drops Oil
Instructions
