This is a birthday gift for my cousin, Rama, who seems to love biryanis and pulavs. 🙂
What I loved about this quick and easy Paneer Biryani was just that; it was quick and easy to make, but oh-so-full of subtle flavours. You could have this biryani by itself, or then as a vehicle for dishes such as Mirchi ka Salan.
Serves: 4
Time: 45 Minutes
Ingredients
- Basmati Rice – 1.25 Cups
- Paneer or Cottage Cheese – 150 gms
- Peas – 1/4 Cups
- Carrot – 1 Small
- French Beans – 6
- Cauliflower Florets – 1/4 Cup
- Onion – 1 Small
- Cloves – 3
- Cinnamon – 2″ Piece
- Cumin – 1 tsp
- Bay Leaf – 1
- Turmeric – 1/4 tsp
- Garam Masala, Kitchen King Masala – 1 tsp
- Ghee or Oil – 1 tsp
- Salt to Taste
Method
- Wash the basmati rice and soak in 2 cups water for 10 minutes.
- Add 1/2 tsp salt and pressure cook for two releases of pressure (2 whistles).
- When the pressure cooker cools, spread the rice on a plate to cool and dry a bit.
- Peel and chop the carrot into 1/2″ pieces.
- Peel and chop the onion into 1/2″ pieces.
- Chop the French Beans into 1/4″ pieces.
- Cut the paneer into 1/2″ cubes.
- In a heavy bottomed vessel, heat the oil or ghee.
- Add cumin, cloves, cinnamon, and bay leaf.
- Saute for 2-3 minutes.
- Add onion and saute till the onion is transparent.
- Add french beans and carrot pieces.
- Saute for 5-7 minutes.
- Add cauliflower florets.
- Stir-fry till all vegetables are cooked.
- Add turmeric and garam masala/kitchen king masala.
- Saute for 2-3 minutes.
- Add paneer pieces.
- Saute for 2-3 minutes.
- Add the cooked rice and salt.
- Mix with a gentle hand.
- Serve hot with raita, papad, or salan.
