Sudha Sindhu: Almond Paste and Mava Balls Simmered in Saffron Milk
Sudha Sindhu is lesser known Bengali Sweet that I discovered during my research. It is essentially Almond Paste and Mava balls simmered in saffron-flavoured reduced and sweetened milk. The result is a decadent dessert that is delicately flavoured, not too sweet and creamy.
It does take some time to make but then the result is simply fabulous.

Called Karamani Sundal in Tamil Nadu and Alasandala Guggillu or Bobbarla Guggillu in Andhra, this is a simple snack of boiled and tempered black-eyed peas seasoned with grated coconut.
Malvani Kala Vatana Sambar | Kalya Vatanyachi Usal
Malvani Kala Vatana Sambar, also called Kalya Vatanyachi Usal or Kala Vatana Rassa, is typically served with Malvani Vade.
It is also served as naivedya for Janmashtami and Ganesh Chaturthi.
Ellu Sadam | Nuvvula Annam | Ellodarai: South Indian Sesame Rice
Called Ellu Sadam or Ellodarai in Tamil Nadu, and Nuvvula Annam in Andhra, this is a delicious South Indian Sesame Rice.
It is offered as Naivedyam during Navratri and Puratasi Masam Venkateshwara Pooja.
Ksheerannam: Creamy, Saffron-flavoured Rice Kheer from Andhra
Ksheerannam is a thick, rich and creamy rice kheer made by cooking rice in saffron-flavoured milk till all the milk is absorbed.
Once you taste this Andhra Chawal ka Kheer, you may not want to go back to the usual kheer.
